It’s never too early to start planning that wonderful Thanksgiving meal that everyone looks forward to, especially if dinner is at your house! My advice: plan that menu NOW and give everyone their assignments early so no one’s stressed out at the last minute.

The veggies are always one that I struggle with because I want to make something other than plain old corn or green beans, but I want the kids to eat it too! I was asked to create a Thanksgiving side dish recipe using Country Crock spread in place of butter. I thought this Browned Butternut Squash recipe would please both adults AND kids because the squash is cooked in Country Crock pumpkin spread (with 0 grams of trans fat) and little bit of brown sugar.

Browned Butternut Squash ingredients

I also love this recipe because it’s very easy and only requires a few ingredients.


Ingredients:

2 tablespoons Country Crock Pumpkin Spice spread

1 butternut squash (about 1 3/4 lbs), peeled, seeded, and cut into 3/4-inch cubes

1/2 cup low-sodium canned chicken broth

1/4 cup water

1 tablespoon dark-brown sugar

Directions:

1. Heat Pumpkin Spice spread in a large skillet over medium-high heat. Add squash, saute, stirring occasionally, until golden brown and tender when pierced with a fork, about 16 minutes.

2. Add chicken broth, the water, and brown sugar, cook until liquid has evaporated and squash is nicely caramelized, about 6 minutes. Remove from heat, and season with salt and pepper.

Thanksgiving browned butternut squash

The squash turned out delicious and the kids even liked it – yay!! It’s a little sweet, but not too sweet and the pumpkin spice spread gives it just a perfect hint of pumpkin flavor. We’ve also used the Pumpkin Spice spread on rolls and they are soooo yummy – I would highly recommend to everyone!
